Our Spirits

We use pot stills to distill our liquors. A pot still is a type of distillation apparatus used to distill alcoholic spirits. Pot stills operate on a batch distillation basis as opposed to column stills which operate on a continuous basis. Our pot stills are constructed from copper based off Appalachian tradition. During first distillation, the pot still (or "wash still") is filled about two-thirds full of a fermented liquid (or wash). The pot still is then heated so that the liquid boils. The liquid being distilled evaporates & a concentration of alcohol in the vapor phase travels up the swan neck at the top of the pot still & down the lyne arm, after which it travels through the condenser, where it is cooled to yield a distillate with a higher concentration of alcohol than the original liquid. This liquor is further distilled a second time in a pot still to yield a distillate with a higher concentration of alcohol.

Our Hammond Rum is a smooth clear spirit that tastes so good it doesn’t need spices or aging! This rum is a blend of four types of sugars. It’s influenced by Caribbean recipes and proves that clear rums can have flavor and be delicious!  We sell 100 and 80 proof versions of this white rum.
